Konjac flour is sepd. from tubers of konjak Amorphophallus C. koch by pulverising the tubers in a liquid medium to give a pulp contg. particles of konjak flour of 2 x 10-2 mm and a powder of tachiko of dia 1 x 10-2 mm, suspended in the liquid medium, sepg the crude konjak particles from the pulp, polishing them with a water-miscible organic solvent to remove tachiko from the konjak particles, recovering the konjak flour from the organic solvent, adjusting the concn. of the organic solvent present in or on the konjak flour to =30 vol %, and drying the konjak flour at 50-130 degrees C.
