Two asparagus are gripped in chucks for rotation on parallel axes on each side of a parallel chain run carrying cutters on both sides to peel both vegetables simultaneously; loading into the chucks is automatic from a magazine holding several asparagus via a retractable device which returns to support the end of the vegetable remote from the chuck, and skin strips are automatically brushed away as the chain progresses. High speed peeling which produces a very clean asparagus of good appearance with minimum waste.
