In a cooling process for a hot-strip mill wherein cooling water is sprinkled on a strip from a plurality of spray banks thereby to cool the strip and to control the winding temperature thereof, the temperature of the strip at the inlet of the process is detected, the initial value of a function prescribing a desired temperature falling rate is calculated from the detected value, and it is applied to a first analog shift register.
