Trans-4-(4,5-dimethyl-2-furyl)-3-buten-2-one (I), prepd. by condensing 4,5-dimethylfurfurol with acetone, under standard conditions, advantageously in a solvent, is used as a flavouring agent for foods and food supplements, e.g. beverages, milk and ice-cream, or for prepn. of flavouring agents having a caramel aroma. (I) imparts full caramel aroma on its own and pref. is used in 0.1-100 ppm concn.
