Drinks produced by alcoholic fermentation, such as beer or wine, are passed at a predetermined temp. and press through =1 layer placed before a filter and contg. acid-decomposing microorganisms or enzymes. Pref. two layers are used, one of them contains lactic acid bacteria and the other contains acid-converting yeasts. Pref. another layer contg. yeasts effecting alcoholic fermentation is placed in front of the above two layers, whereby the process is simplified.
