Prepn. of 1-aspartic acid by (a) growing Bacterium Cadaveris ATCC 9760 aerobically in a culture medium to produce aspartase, then (b) treating the bacterial cells from (a) with NH4+ and fumarate ions in a molar ratio of 1.5:1, the initial concn. of fumarate in the mixture being 7 to 40% w/v, the reaction proceeding at 35-37 degrees C at pH 8.5 to 8.6 until the conversion into 1-aspartate is almost complete, then (c) collecting the 1-aspartic acid. The enzyme aspartase converts quantitatively NH4+ and fumarate into 1-aspartate. The product is an intermediate for sweetening agents e.g. aspartame.
