Wrapped dairy prods, delicatessen items such as smoked salmon, sliced beef, fish fillets etc., are stored at freezing temps. then rapidly heated up to a temp. suitable for refrigerated storage/display, i.e. about 4.4 degrees C. The cabinet in which this defrosting process takes place is thermostatically controlled to prevent the temp. of the prod. going above the refrigerated limit at any time; simultaneously, the air circulating in the cabinet is continually dehumidified so that moisture does not form on the prod. wrapper as the temp. rises quickly.
