Mustard, consisting of a mash prepd. from ground mustard, vinegar, sugar and opt. condiments, also contains lower mol. wt. saccharides, as decompsn. products of degraded ground mustard-starch, and pref. also the ferment diastase. The mustard mixt is used in the prepn. of commercial or household mustard. Degradation of polysaccharides improves mustard taste, resulting in a sharper, fresher flavour, less inhibited by bonding with starch, etiher by swelling or by glutinisation, the diastaste supports degradation of the polysaccharides.
