Tubular collagenous casings, esp for sausages - made by swelling collagen from (un) limed hides with strong acid are more transparent and have higher tensile strength
Tubular collagen casings, esp. sausage casings, are made from hide collagen by contacting small pieces of the the (lined) collagen with an aqs. soln. of a non-toxic acid having a concn. of 10-45 wt. %, a dissociation constant of 10-6 -10-3 and a pH of 1.5-3.5 for sufficient time to fully swell the collagen, forming a pulp of the collagen, extruding a slurry of this pulp in tubular form, coagulating, tanning or curing and, finally, drying. Lined hide collagen can be used without affecting the finished products props. (these materials have improved storage stability). The finished product is more transparent and has a higher tensile strength. Certain mixing and homogenisation stages can be omitted so that the process is cheaper. The finished casing has improved properties w.r.t. the filling and the concatenation of single sausages for further treatment.
