A winemaking vessel is claimed in which the fermentation chamber is connected directly to the wind outlet which pref. comes into action automatically to discharge wine as soon as the contents of the fermentation chamber rise to a predetermined level; this may be achieved by fitting in the outlet line a solenoid valve actuated by a level-detector, or the outlet may be via a siphon which runs only when the level is reached. A further solution is to fit a riser chimney inside the fermentation chamber, an overflow from the chimney leading to the wine outlet. When the wine outlet operates via automatic valve or siphon, the outlet can have an adjustable level feed pipe inside the fermentation chamber.
