1508635 Texturised mycelial fungal foodstuff E I DU PONT DE NEMOURS & CO 3 June 1976 [13 June 1975] 25385/75 Heading A2B [Also in Divisions B4 and B5] A mycelial fungal mass having reduced turgor and a solids content of 20-35 wt. % is texturised by passage under pressure through at least one apertured member to filament the mass, and compacting. The mass may be extruded through two meshes of size 0.3-2.0 mm, the upstream mesh being of smaller size, to yield filaments 21 in groups separated by planes of discontinuity 20, the border filaments 22 in a group being flattened. The extruded filaments may be compressed by passage through a tapered bore. The fungal mass may be those disclosed in Specifications 1331472 and 1346062.
