The saccharification of mash in a beer brewing process can be supervised by optical observation of the colour change of a mash sample to which Lugol's soln. has been added. An optoelectronic reflectometer measures the intensity of the radiation from a stabilised light source which has been reflected in the characteristic blue range at the surface of the mash sample. A difference amplifier compares the result with that of a second reflectometer on an untreated mash sample. This simple measuring set up functions reliably under the rough conditions in a brewing house. It produces quick results and can easily be automated.
