A dry beverage mix contains sucrose (I) at least partly as crystals colour-plated by deposition of colour from aq. soln. ad a small amt. of finely-divided Ca3(PO4)2 (II) homogeneously dispersed, the (II) particles also being colour-plated before blending and some fo the colour originally plated onto (II) is transferred to the surface of the coloured (I) particles. In fruit-flavoured mixes: a greater colour intensity is thus achieved compared with colouring (I) only. The whitish shade of (II) (added to improve free-flowing characteristics) is offset; reflectance is reduced and minor additives can be thoroughly blended without loss of hue by attrition milling (if coloured (I) crystals are broken their exposed uncoloured surfaces are coloured by transfer from (II)). Amt. of soln. required to colour-plate (I) is also reduced.
