Ship biscuits and similar pastry are produced by punching out a flat dough disc, allowing it to rise and baking it lightly in an oven with forced air circulation with all vent valves shut. Finish baking and drying continues in the same heat at a lower temp. and with the vent valves open. This saves the time required for the conventional two-stage process requiring the removal of the once baked biscuits and their recharge. The process is now uninterrupted and the prodn. costs are reduced.
