An insolubilised glucose isomerase (I) is prepd. by adsorbing and bonding glucose isomerase onto an anion exchange resin with porosity 4.5% measured by the aq. dextran soln. method and with ion exchange capacity 0.035 meq/ml resin measured by the poly-anion salt analysis method. Isomerisation of glucose to fructose by means of (I) is claimed. The prod. has increased and prolonged enzymatic activity, and is more resistant to crumbling and deformation. There is less press. loss in the column through which the glucose soln. passes. The yield/unit of time is greater. The fructose prod. is not discoloured. The resin esp. has porosity 7-50% (7-20%) and ion exchange capacity 0.035-0.3 (0.05) pref. 0.05-0.1 meq/ml resin. The resin is pref. a styrene-divinylbenzene copolymer carrying quat. ammonium gps., in partic. trimethylammonium or dimethylethanolammonium gps. The glucose isomerase is derived from Actinomycetes.
