Cheese mould having drying cloth liner - with progressive stretching device which operates as mould cap moves downwards

The cylindrical mould is provided with a cap which fits into the mould. The internal faces of the latter and of the cap are lined with the drying elements which may consist of polyamide cloth. Element is fixed to the edge of the mould by a collar while the element is held on the cap by the elastic ring. The mass of curds is shown before and after press. has been applied to the cap. Element has a movable base in the form of a disc and an annular stretching device; as the cap moves downwards the element moves successively from its edge towards its centre but a certain depth remains so that the element does not have to support the force of the press. The device is always stretched, both along the walls of the mould and on its base; but this tension does not result from an extension of the material but from the action of the stretching device.
