L-Amino acids of formula (I) are prepd. by holding a hydantoin cpd. of formula (II) at pH 5-11 in an aq. soln. at 15-70 degrees C, in presence of the enzyme produced by Flavobacterium aminogenes, esp. FERM-P 3133. In the formula, R is Ph or indolyl, both opt. substd. High yields of (I) are obtd., as the micro-organism has high activity for converting cpds. (II). In an example DL-5-indolylmethylhydantoin was converted to L-tryptophan by using Flavobacterium aminogenes cells in phosphate buffer.
