The basket with solid walls and a fine mesh base (2) serves to filter the oil in a deep food drying vat, (A) and also to remove minor food particles prior to their carbonization. The filter basket (B) contains the food panier (C) and is removed after each cooking cycle to effect both filtering and fine particle removal. The basket may have an individual handle (1) and the base may be demountable with upstanding local blocks (3) supporting the food panier (C).
