The coil is made of tube of rectangular cross-section in material which conducts heat efficiently. The inner flat face of the rectangular cross-section contacts the wall of the vessel continuously as it winds around it. The ends of the coil are connected in a circuit with a refrigerating system. The outer flat face of the rectangular cross-section tube is surrounded by a heating jacket, pref. in the form of electric elements in contact with the tube and forming a jacket around the coil. The coil is pref. made as a multi-start helix with inlets and outlets connected into a single inlet manifold and a single outlet manifold. A pasteruriser to liq. and creamy foodstuffs esp. prods. made from milk and fresh cream is produced. When the pasteuriser had a cooling coil of circular cross-section, embedded in thermally conductive cement to improve heat transfer to the vessel, heat application was limited to 100 degrees C by immersion in hot water. The coil and cement required constant maintenance and heating was inefficient due to only line contact between coil and vessel. These problems are now overcome.
