Rapid electrochemical determination of invert sugar, saccharides, glycols etc. is carried out by polarographic measurement of the consumption of periodate, iodate or other suitable oxidn. solns. using electrodes which are inert to air and the soln. The measuring electrode is pref. of W and the cathode of high grade steel. The W electrode is pref. connected to a voltage-alternation compensating electrode. The use of the inert electrode avoids inaccuracies due to pressurisation.
