Process and storing fresh milk. The milk is precooled in a reception chamber before being transferred to a storage tank where the desired temp. for storing the milk has been established. The total yield of a single milking, or of several, simultaneous milkings, is gathered into the reception chamber where it is cooled down to the desired storage temp. as quickly or as slowly as desired and then transferred into the storage tank. While milk is being precooled in the reception chamber, it is pref. subjected to constant agitation, but in the storage tank agitation is limited to a few times daily or to homogenising just prior to tanker collection. The process can be applied to existing plant using a pump to transfer from a reception tank to a larger storage tank. The pref. embodiment for a new installation superimposes the reception chamber on top of the storage tank in a single, insulated shell with cooling coils in the dividing wall between tank and reception chamber, from which transfer is by gravity. Used for storing fresh milk awaiting tanker. Collection may also be used for treating wine during prodn. and blood in abattoirs. Conditions remain ideal at all times in the storage tank since added milkings are always at storage temp. before introduction; this also means that the main stock does not have to be subjected to prolonged and harmful agitation each time a milking batch is introduced.
