Nutritionally high-grade protein-enriched edible bran is prepd. by rolling out wheat grains to pastifiable flakes; kneading with water to a dough-like mass and sepg., by washing with water, into starch, soluble materials and a mixt. of bran, gluten and germ-embryo. The husk mixt. is dried protectively to the protein-enriched special food bran, while maintaining the natural gluten properties. No chemicals are added with the exception of the opt. ascorbic acid addn. to strengthen gluten in dough-formation. The bran can be used (i) to enrich bread and pastry with ballast material, to overcome faulty nutrition, and (ii) as feedstuff. Starch yield can reach 93% and solids yield 99%. Sec.: prim. starch distribution ratio is 1:8 to 1:16.
