A scalding cabinet for poultry in which the prod. is processed in an atmos. of low pressure steam, pref. contains a supporting pillar from which a bird or birds can be suspended above a reservoir of water which is evapd. by locating the cabinet over a source of heat. A removable hood pref. holds the vapour around the suspended poultry. As a safety measure, to prevent the poultry contacting the hot water, a grill is pref. interposed between th suspended poultry and the surface of water in the reservoir. Heating beneath the reservoir can be provided by a gas burner, oil burner, electric heating elements, solid fuel hearth etc. The heater can be fixed beneath the cabinet to travel with it as a self-contained unit.
