PURPOSE:An edible whipping agent that contains hydrolyzate of collagen protein by enzyme, a foaming stabilizer, such as and when necessary gelatin, to keep stably whipped foam and baked food made by using the same. CONSTITUTION:Said whipping agent is composed of a hydrolyzate obtained by a whip stabilizer hydrolysis of collagen protein with a protease, glycyrrhizin, carrageenan, when necessary, unhydrolyzed gelatin and a dispersant and the resulting whipping agent is used in ice cream, baked food as sponge cake and further sanck food, pot-steamed hotchpotch (''chawan-mushi) and other food such as fish paste.
