PURPOSE:A processing material for miso koji capable of giving koji having improved degree of propagation and growth of koji mold Aspergillus oryzae and a high enzyme titer, prepared by expanding a mixture of carbohydrate and protein materials. CONSTITUTION:Water is added to a powder or granular uniform mixture of carbohydrate materials, e.g. rice, wheat, or corn, and protein materials, e.g. soybeans, at a weight ratio of 80:20-20:80 to give a moisture content of 20-50%, kneaded in an extruder, and suddenly released and expanded, then dried to give a processing raw material for miso koji with a moisture content of 10% and apparent specific gravity of 0.2-0.5.
