Prodn. of sea-salmon product - from haddock-like fish and binder

Prodn. of a sea-salmon prod. or substitute in the form of slices from haddock-like fish (sea salmon, sea pike, cod, etc.) is carried out by (a) finely mincing the shredded (opt. dyed) fish or skinned fillets; (b) dyeing any undyed fish material; (c) mixing at 15 degrees C with a binder contg. =5% casein and =2% gelling or thickening agent; (d) mixing at 40-50 degrees C with a liq. comprising gelating, acid (to give pH 5), preservatives and flavours; (e) moulding the mixt.; and (f) slicing at 4-5 degrees C.
