The oven is of the type in which moulds are stacked into racks or trollies which are then moved into the oven. The outside surfaces of the moulds are contacted by a hot fluid which transfers heat to the prod. in the mould. Heat is now transferred by water sprayed over the stacked moulds from sparge pipes located in the upper part of the oven chamber. The water drains into a tank below the chamber to be recirculated by pump to the sparge pipes. The tank is fitted with a water heater provided with thermostatic control. Uniform cooking of prod. in all parts of the chamber is achieved. There is rapid response to thermostat sensor. Uses less energy than total immersion and hot air systems. The sprays clean the outside surfaces of the moulds etc.
