Prodn. of yeasts comprises sepn. of proteins from whey, recovering the lactose, hydrolysing it and using the hydrolysed lactose as substrate for the organism, esp. yeasts. Yeasts which are pref. grown include Kluyveromyces fragilis and K. lactis, and Candida utilis, C. tropicalis and C. pseudo-tropicalis. Process allows economic use of whey, a by-prod. from cheese mfr. The protein and the biomass grown on the hydrolysed lactose are used as food for man and animals.
