The Lucus, Laminaria or similar algae, after drying and cutting into fine pieces is soaked in a mixture of soft water and white wine for 24 hrs., followed by cooking in white wine for 2 hrs. The algae pieces are then drained, chopped up finely and then soaked in a sugar syrup contg. coriander powder and alcohol. Used in making cakes, pastries, etc., it avoids the need for the usual preservatives. The juice is used as a substitute for a liquid component of the recipe.
