PURPOSE:To collect an amylase with high titer and to reduce the cost of waste liquor treatment, by subjecting a waste liquor of wheat starch obtained in preparing wheat starch using wheat flour consisting of starchy flour layer of wheat seed grains as a raw material to spray drying, followed by filtration, concentration, and spray drying, etc. CONSTITUTION:Wheat flour consisting of starchy flour layer of wheat seed grains or albumen part in the vicinity of its as a raw material is blended with the same amount of water to give dough, which is washed with water in a water cleaner, and separated into starchy flour milk and raw gluten. The prepared starchy flour milk is sieved, wheat bran division is removed, the milk is centrifuged by a nozzle separator, screw decanter, etc., and separated into starchy flour milk and a waste liquor. The waste liquor is subjected to spray drying to give raw enzyme powder or, concentrated under vacuum, dried under vacuum, subjected to spray drying, lyophilized, or subjected to ultrafiltration and spray drying, etc., to give the desired amylase enzyme powder.
