PURPOSE:To prepare processed pickles of tomatoes, by pickling green tomatoes which are washed with water and salted in a mixture of SAKE lees with sweet SAKE and sugar. CONSTITUTION:Unripe green tomatoes are washed with water and salted in 15-20% salt for 20-30days to give rough pickles, which are then pickled in a mixture of SAKE lees with low-class distilled spirit, sweet SAKE and sugar for about 1month and then in a mixture of SAKE lees with SAKE and sugar for about 1month to give the aimed product.
