In prepn. of bitter prods. from hops, a hop extract (in an organic solvent of low polarity) consisting mainly of alpha- and beta-acids, is isomerised with Mg ethylate, suspended in anhydrous ethanol. The Mg ethylate is prepd. beforehand by reaction of the anhydrous alcohol with metallic Mg. Isomerisation is carried out either directly, or after sepn. of the alpha-acids from the beta-acids. The bitter components of hops are utilised to a max. extent.
