A roller dryer is used to dry a precooked, aq. paste of flour, the dried prod. being transferred via a screw conveyer to a grinding mill. The film of precooked paste doctored from the roller dryer drum is immediately deplastified by the thermal shock of being brought into contact with a cold surface. Pref. the moisture content of the paste leaving the dryer drum is between 6% and 12% depending upon the sugar content of the formula. The final prod. retains a similar moisture content. A final moisture content of 6-12% instead of 0.5-6.0% means that drying energy is reduced, the possibility of thermal damage to proteins and vitamins is reduced and the homogeneity is improved.
