A ferment is introduced to a part of the residues followed by fermentation. The fermented part is then mixed with the rest of the residues followed by fermentation until maximum enrichment is achieved. The process is applied to residues from the sugar, brewing, preserving, and wine-making industries, etc. to make animal food. It enables enrichment in protein with a better protein/energy value balance.
