The seedling of the milk or the cheese itself by spraying the surface with moulds, partic. impregnation with conidium of the moulds which have previously been cultivated in an immersed aerated culture, in a nutrient medium up until emission by the conidium of =1 germinative tube. Pref. penicillium are candidium or caseicaluj, camembert or alum or glaucum or roqueforti. The pref. nutrient medium is pref. milk opt. supplemented in sugar, nitrogen and/or growth elements in a synthetic nitrogen contg. sugar medium opt. contg. surfactants. The medium is pref. seeded with 2 x 108 to 2 x 1012 of conidium/1 and culture is pref. at 10-35 degrees C with aeration of 0.1-5 vols. air/vo. culture. The milk or the cheese is pref. seeded with 1 x 108 to 2 x 1010 of conidium for the equivalent of 1000 l milk. The process enables less conidium to be used for the seeding, and makes it easier to avoid fungal contamination.
