Gateaux comprise alternate layers of savoy biscuit and flavoured whipped cream. The biscuit is made from: 3 eggs (66g); flour (100g.); and sugar (100g.). The flavoured whipped cream comprises 1l fresh cream (fat content 43%) six egg yokes and: (a) for chocolate flavour 100g. sugar; 50g butter and 300g. chocolate; (b) for Grand-Marnier flavour 115g. sugar; 3.5 cl unsweetened Grand-Marnier extract (60 deg); (c) for mocha flavour 115g. sugar and 3.5 cl unsweetened coffee extract. The cake has alternating brands of pure and flavoured cream.
