The present invention relates to a foodstuff composition which contains slowly assimilated carbohydrates, dietary fibres and a complexing agent for the starch chains of the carbohydrates. The invention similarly relates to a process for the production of this composition and its use in the treatment of carbohydrate metabolism disorders and in particular in the treatment of diabetics.
