The process is characterised in that, at regular intervals which are determined as a function of the nature of the product to be treated, a controlled aeration of the swath (1) is carried out, which is intended to avoid the formation of anaerobiosis regions, and to promote and control the funnel effect, by means of removable aerating pipes (3), in that physical parameters such as the temperature of the swath, its moisture, its compactness and its mass are controlled, together with the chemical parameters of the swath, such as the pH, the nitrogen losses, and the like, and in that the swath is turned over by means of the automatic inverting machine each time one or more physical and/or chemical parameters are no longer contained within a predetermined range, and in order to obtain a perfect homogenisation of the swath mass (1) by introducing peripheral layers of the old swath into the middle of the new swath, with optional addition of components which promote composting.
