Process for the preparation of agents for use in the food industry and for animal feed purposes, by processing cyanogen-containing tropical tuber plants

The process comprises removing the superficial parts of the skin as well as dirt, comminuting the plants or parts thereof which have thus been cleaned, subjecting them to a fermentation process, if appropriate with an addition of bacterial strains which bring about lactic acid fermentation, followed by adjusting the water content by mechanical separation of water and drying until the desired value is reached, whereupon a solution of 1 or more water-soluble magnesium salts is added in amounts of 0.1 to 6% by weight to the comminuted plant, or the comminuted parts of the plant, if appropriate together with bacterial strains which bring about a lactic acid fermentation, whereupon after stirring 0.1 to 3.0% by weight of a sulphur-containing reducing agent, relative to the weight of the comminuted plant, or parts of the plant, are added to the pulp. This process allows all parts of tropical tuber plants to be processed in simple apparatus to give valuable products without waste material.
