Deepfrozen minced meat is prepd. and shaped by subjecting the meat, immediately after mincing, to a rapid deep freezing by contact with a cryogenic fluid followed by reagglomerating the deep frozen piees by compression. The fluid is pref. nitrogen or cabonic anhydride. Pref. rapid deep freezing is effected by mixing the meat particles with dry ice. Also laimed is an appts. comprising a meat cutter provided with rotary knives, a device for deep freezing the cut meat with dry ice, a device for separating the fat from the lean parts by fluorescence to UV rays or X-rays and a device for compressing and demoulding. The process enables the texture of the meat to be preserved and is bacteriologically safe. It allows significant reduction in plant requirements and facilitates cleaning. The deep frozen prod. may assume any shape, i.e. shapes other than steak can be achieved e.g. reconstituted roast.
