PURPOSE:To maintain the same freshness of a thawed sliced fugu (swell fish) as that immediately after the dressing, by rapidly freezing a sliced raw fugu at a temperature of -50 deg.C or below, and by freezing and storing the fugu packed in a moistureproof film. CONSTITUTION:A dressed sliced fugu (swell fish) is instantaneously frozen by liquid nitrogen or liquefied carbon dioxide at an atmospheric temperature of -50 deg.C or below, usually -50--160 deg.C, for 0.5-10min. The frozen fugu at -20 deg.C or below is then packed in a packaging material having a low water vapor permeability, e.g. polyvinylidene chloride, if necessary in vacuo, and stored in a refrigerator at -20 deg.C or below.
