In a continuous wort boiling for beer breweries, a vacuum evaporator subsequent to the reactor and one or several pressure release stages is used for the vacuum evaporation of the wort by utilizing the vapours from the various stages. The low-temperature heat is utilized in vapour condensers, connected in series with each other, in counterflow to the wort and for the reheating of brewing water. A wort cooler, subsequent to the vacuum evaporator, uses brewing water as the coolant. This reduces both the energy requirement and the hop consumption considerably. The wort is degassed to a considerable degree and its quality has been improved.
