Device intended for achieving energy savings and for suppressing atmospheric pollutions on columns for the deodorisation of food oils and fats and on the devices operating on the same principle. Device made in two variations, one operating at a temperature greater than 0 DEG C, the other operating at a temperature below 0 DEG C. In the first variation, the gaseous mixture is conveyed from the fatty acid condenser B into a steam ejector 2, where its pressure is raised between 10 and 20 mb. The gaseous mixture is then conveyed into a cyclone 4, where its temperature is lowered by water injection. The temperature lowering causes condensation or congealing of the fats, which are separated from the remainder of the gaseous mixture by the cyclone. The gaseous mixture is conveyed into a barometric column 11 designed so that the few fat particles, which have escaped from the cyclone, are not able to form compact blocks therein and so that condensation of the vapours is perfect. IMAGE In the second variation, the gaseous mixture, under very low pressure, is conveyed into the cyclone 4, where it is cooled by virtue of the injection of a small quantity of water which evaporates. The fats included in the mixture solidify and are separated from the gaseous mixture, which now comprises only steam and air. The mixture is conveyed into a vessel 26 containing plates 27, which are cooled by a refrigerating circuit 28. Brine descends from plate to plate in countercurrent to the gaseous mixture. The steam condenses. Only air arrives from the vessel 26 from where it is extracted via a system 24. The brine is regenerated in an evaporator 31, supplied with energy by the refined oil exiting from the column A.
