The scraper is intended for producing flakes, partic. of chocolate. It comprises a scraper blade (2) with its ends (6) pivoted to elements (7) which are themselves pivoted (8) to the ends of a cross-bar (3) whilst its centre (9) is spring-loaded, (10) relative to the centre (14) of the bar such that, in the rest position, the blade is curved away from the bar. A rod (12) fixed to the blade centre pref. extends through the spring and through a bore (13) in the bar centre. The lower edge (5) of the blade may be convexly curved.
