The invention comprises a process for regulating the baking atmosphere, by means of which the production of bakery products of appropriate quality is to be ensured with simultaneous reduction of waste. The invention can be applied in the bakery industry with all tunnel ovens for producing a very wide range of bakery products. The object of the invention comprises developing a process which enables the baking air moisture required, depending on the baking temperature, baking time and the products to be produced, to be provided during the baking process and over the entire baking area, that is to regulate the moisture content in the atmosphere without bread faults arising from excess steam or from insufficient baking air moisture and without extending the baking time. The object is achieved according to the invention in that dry, preferably heated, air or air of high humidity is blown into the baking tunnel at a plurality of sites. As a result, a superatmospheric pressure of 2...20 Pa is formed, compensating the suction effect of the steam extraction, which ensures than uncontrolled entry of foreign air and occurrence of draughts are avoided, heat losses are reduced to a minimum and the baking atmosphere is stabilised in all baking zones.
