Xylose isomerase, process for preparing it, immobilized xylose isomerase and process for isomerizing glucose to fructose. The xylose isomerase can be prepared using a strain belonging to the Streptomyces murinus group. In such a process, a good compromise is achieved between fermentation yield, purification yield and the possibility of preparing an immobilized xylose isomerase possessing satisfactory physical and chemoenzymic properties.
