The invention, which relates to enzymes, concerns especially an insolubilised invertase attached by a covalent bond to a solid support, characterised in that the invertase is attached by covalency to glutaraldehyde which is bonded by covalency to a difunctional silane, itself fixed on porous silica particles having a particle size in the ranges from 150 to 250 mu m and a pore diameter within the range from 10 to 30 nm, this insolubilised invertase having a specific activity of at least 6000 units per gram of insolubilised enzyme. Use for the hydrolysis of sucrose in sweet glucose and fructose syrups.
