A method for producing a blue-based dye from gardenia fruit

A process for preparing a blue pigment from gardenia seeds consists of (a) inoculating two loopfuls of Penicillium roqueforti or Trichoderma viride into the medium (pH 4-10) contg. gardenia seed crushes or their exts., nitrogen sources, carbon sources, and minerals; (b) culturing for 5-7 days at 20-40C under submerged aerobic condition; and (c) purifying the culture broth by a common method. The process gives higher yields (10-15(w/v)% based on gardenia seeds), and the blue pigment can be used in foods, medicines, and cosmetics.
