摘要

The present invention relates to an improved process for producing a finished product capable of creating a stable cloudy phase in fruit juices or drinks based on fruit juices. This process is characterised in that the whole rind or the albedo of the rind is blanched in the presence of citric acid. Advantageously, the whole rind of a citrus fruit is used which is cut into small smooth-edged fragments before the blanching. A finished product is thus obtained with improved solubilisation of the polysaccharides in water without substantial degradation.
