PURPOSE:To prepare a rice cake having uniform mugwort color and delicious taste and exhibiting antioxidation effect, antilipemic effect, etc., by pulverizing popped soybean embryos and adding the embryo powder to a rice cake before the pounding process of the cake. CONSTITUTION:The objective rice cake can be prepared by adding popped and powdered soybean embryos to a rice cake during the preparation process of the cake comprising washing of rice, steaming, pounding, forming, etc., and before the pounding process, preferably immediately before steaming. The amount of the embryo powder is e.g. 15vol% of the rice cake. The popped soybean embryo powder can be prepared by keeping embryos at 91 deg.C under 6.3kg/cm2 pressure for 12min, releasing to atmospheric pressure to pop the embryos, parching for 20min in sand at 100 deg.C and pulverizing the product.
